The Buffet at Wynn gets its own post because it is so life-changing. Few things capture all the good parts of Las Vegas like a top-notch, all-you-can-eat buffet before a day of exploring the strip.
The rumor is that Steve Wynn is a vegan (all the restaurants in the Wynn have a separate vegan menu). So I had high expectations for their buffet.

The view from our table through the dining room to the food area in the back. The food is arranged in a wide “U” with stations lining the walls and a big dessert station in the middle. Food stations are divided into regions like “Italian,” “American,” “Specialty,” and “Asian” and include fresh fruit, tapas, pizza, pasta, an omelet bar, a pancake bar, a plethora of meat and sea food, sushi, egg rolls, enchiladas, potatoes, sliders, and most anything else you can think of.
On our first pass, we were disappointed to find only one remarkable vegan option (the enchiladas), so we loaded up on fruit and started to wonder if this was a good idea. Then Jeff’s mom decided to ask the chef …
… and I’m so glad she did! It turns out that they have tons of vegan options. Basically every station has vegan options. The omelet bar does tofu scramble, the Asian station has vegan egg rolls, vegan sushi, and seaweed salad. The Italian station makes pizza with vegan cheese. And the desserts! Two flavors of out-of-this-world vegan ice cream, passion fruit tapioca pudding and coconut tapioca pudding that were creamier than regular puddings, and even a baked good or two.
But the real life-changing dish was the spinach-artichoke vegan ravioli with a house-made marinara. Hands-down no-question the best ravioli I’ve had in my life. Probably the best marinara I’ve had in my life, too. Whatever you imagine that this tastes like, it tastes better. Although I’d already made a few trips to the buffet, and although I’d promised room for more enchiladas, I ended up abandoning my plans to finish off most of this plate.
Once we were to the point of fullness so that even a digestion walk couldn’t help, we finally decided to call it quits, waddle out one of the Wynn’s side entrances to the strip, and explore the rest of Las Vegas.
