I always wanted to try Vegas on a weekday. It would be less crowded and more affordable. So I gave it a try and was reminded of how much I love Vegas. It’s changed since I was there last–casinos no longer offer free parking, tube floaties at the MGM Grand lazy river must be purchased, but there is new vegan food!

Speaking of nachos, the Nacho Daddy menu has a full page devoted to vegan options including tacos, fajitas, and chimichangas. I got the quesadilla (with a side of buffalo sauce, recommended by the host), and it was perfect.
The “Picnic & Art” display at the Bellagio’s conservatory. The stairs and urns are made out of rice and poppy seeds, and the place setting is made from seeds and beans.

First plates. They had breakfast potatoes, vegan muffins, and a cranberry-coconut-cinnamon tapioca pudding (in the glass) that I wouldn’t mind getting again next time.
