There aren’t a lot of vegan donuts in Manhattan–you have to go to Brooklyn or New Jersey. Or to Beacon, New York, where you can get vegan donuts from Peaceful Provisions. (This is the lemon poppyseed, peach, and coconut cacao.)
Beacon is 65 miles from where I’m staying, so I thought I’d swing by during Labor Day weekend as part of my trip to New England.

The trip went wrong from the beginning, however, and I ended up two hours behind schedule trying to navigate my way out of Jersey City with no GPS signal (no phone data for some reason) and the check engine light on in the Subaru. (Yes, the check engine light came on again.)

I had 10 hours of driving to do that day (I was supposed to get to Maine), and I should have abandoned my plans for Beacon and headed straight for Bar Harbor (or a mechanic), but I wanted vegan donuts, dang it.
So I just started driving northwest, remembering from the map that Beacon was in that general direction. I got lucky and stumbled on the right freeway, found a wifi signal at a random Panera in the New Jersey countryside, and made it to Peaceful Provisions 20 minutes before they closed at noon.
They didn’t have wifi that they would share (I had to wander around town to get a signal for directions to Maine), but they did have some donuts left! (I found out later that they don’t always have donuts past 11 am, so that was fortunate.) And the donuts are good! The peach was especially delicious. It was definitely worth the added miles.
