April 30 was a historic leap forward for veganism: my mom made lunch for her birthday. And she debuted a series of homemade vegan cheeses from Miyoko Schinner’s recipes. (For Christmas I gave her Schinner’s The Homemade Vegan Pantry. After she tested some of the cheese recipes on my dad, he made sure Schinner’s Artisan Vegan Cheese would be at their doorstep as soon as possible.) And the result is better than the real thing. These cheeses had more flavor, and they don’t make you feel crummy afterward. The photo is of our appetizer–a cheese board with a quarter sharp cheddar round, and a bowl of sun-dried tomato cream cheese.
 The caprese salad, complete with sliced homemade vegan mozzarella balls. (This cheese has such good flavor!)
 Stuffed shells with homemade vegan ricotta. Classic potluck food sans guilt!
 Homemade bread (infused with rosemary to make it amazing) and vegan homemade butter (which I also like more than real butter).
 Broccoli cashew salad (nostalgia food for me).
 Homemade gluten breaded in cornmeal. So. Good.

And strawberry coconut cake for dessert. (I’ve decided that all chocolate covered strawberries need to be dipped in coconut–it was amazing.) So happy birthday to Mumsey! Thanks for an astoundingly delicious lunch!
