Asacia Blin grew up with homemade ice cream sandwiches and (because of some Celiac friends) turned her childhood love into a gluten-free ice cream shop, Innocent Ice Cream. The shop also has vegan cookies and ice cream!
They started as an ice cream cart then opened a brick-and-mortar shop in the summer of 2017.
They sell ice cream by the pint, by the scoop, or in an ice cream sandwich. Sandwiches come in full size, mini size, or in “flights,” which is three minis.
I went with a vegan flight of the Buttercup (chocolate peanut butter fudge ice cream between peanut butter cookies), the Shortcake (strawberry shortcake ice cream between vanilla sugar cookies), and the Lil Tart (lemon meringue ice cream between vanilla sugar cookies).

They were delicious! (Especially the chocolate and the lemon ones.)
