This is the Trifongo plate, a Puerto Rican dish with mashed green and yellow plantains and cassava. It’s topped with vegan ceviche.
And the Carmo salad: rice, pineapple, avocado, almonds, cashews, raisins, cucumber, green pepper, vegan ham and cilantro tossed with citrus mango vinaigrette.
